Olive Oil Muffins with Chocolate Chunks
- 2 Eggs
- 60 ml Olive oil
- 50 g Sugar
- 50 ml Milk
- 170 g Flour
- 1 teaspoon baking powder
- 1 Cadbury Dairy Milk fruit & nut bar
- 1 tablespoon rum, optional
- 2 slices orange slice jam, optional
- Preheat the oven to 180C/350F.
- Beat the eggs in a bowl, add the olive oil and sugar and mix well.
- Add the roughly chopped chocolate and rum into the bowl.
- Sift the flour and add to the bowl, then pour the milk slowly in and stir gently until there is no powdery texture left.
- Line a muffin pan with paper liners.
- Fill each muffin cup 3/4 of the way, and bake for about 20 minutes or until the top is golden brown.
