Olive Oil Muffins with Chocolate Chunks

  1. Preheat the oven to 180C/350F.
  2. Beat the eggs in a bowl, add the olive oil and sugar and mix well.
  3. Add the roughly chopped chocolate and rum into the bowl.
  4. Sift the flour and add to the bowl, then pour the milk slowly in and stir gently until there is no powdery texture left.
  5. Line a muffin pan with paper liners.
  6. Fill each muffin cup 3/4 of the way, and bake for about 20 minutes or until the top is golden brown.
