Flourless Chocolate Peanut Butter Cookies

  1. Preheat the oven to 350 F. In a mixing bowl, combine the peanut butter, egg, honey, vanilla and salt.
  2. Mix until smooth.
  3. Mix in the cocoa powder.
  4. Roll the dough into 1.5-inch balls and place on a greased baking sheet two inches apart.
  5. With the palm of your hand, flatten the spheres slightly.
  6. Bake the cookies for 8-10 minutes.
  7. Remove from oven.
  8. They will firm up as the cool.
  9. Let them cool completely.
  10. Melt the chocolate in a microwave, at medium power for about 1 minute 30 seconds, stopping every 30 seconds to give the chocolate a stir.
  11. Dip the top of a cookie in the chocolate.
  12. Place on a baking sheet.
  13. Repeat with the rest of the cookies.
  14. Sprinkle gold dust over the cookies, if using.
  15. Let the chocolate set, then eat!
