Flourless Chocolate Peanut Butter Cookies
- 1 cup Peanut Butter
- 1 whole Egg
- 1/2 cups Honey
- 1 teaspoon Vanilla Extract
- 1/4 teaspoons Salt
- 1/2 cups Cocoa Powder
- 4 ounces, weight Semi-sweet Chocolate
- 2 teaspoons Edible Gold Dust (Optional)
- Preheat the oven to 350 F. In a mixing bowl, combine the peanut butter, egg, honey, vanilla and salt.
- Mix until smooth.
- Mix in the cocoa powder.
- Roll the dough into 1.5-inch balls and place on a greased baking sheet two inches apart.
- With the palm of your hand, flatten the spheres slightly.
- Bake the cookies for 8-10 minutes.
- Remove from oven.
- They will firm up as the cool.
- Let them cool completely.
- Melt the chocolate in a microwave, at medium power for about 1 minute 30 seconds, stopping every 30 seconds to give the chocolate a stir.
- Dip the top of a cookie in the chocolate.
- Place on a baking sheet.
- Repeat with the rest of the cookies.
- Sprinkle gold dust over the cookies, if using.
- Let the chocolate set, then eat!
