Libbi's Chocolate Pie
- 2 egg yolks
- 2 cups milk
- 1 cup Equal sugar substitute (Equal spoonful)
- 13 cup cocoa
- 13 cup flour
- 18 teaspoon salt
- 1 tablespoon butter
- 12 teaspoon vanilla
- 9 inches baked pie crusts, cooled
- Beat egg yolks, add milk.
- Beat.
- Sift together Equal Spoonful, cocoa, flour, and salt in a microwaveable bowl.
- Stir in about 1/3 of the milk mixture to make a smooth paste.
- Slowly stir in remaining milk/egg until smooth.
- Microwave about 4 minutes, stopping every 30 to 60 seconds to stir, until thick.
- Add 1T butter and 1/2 t. vanilla, stir until butter melts.
- Pour into baked pie shell.
- Top with meringue if desired or lite whipped topping.
- Chill.
