Brown Rice With Pine Nuts Recipe

  1. Soak brown rice in water at least 2 hrs, or possibly overnight.
  2. Heat oil in a heavy skillet with tight-fitting lid.
  3. Add in minced onion and saute/fry till golden and limp.
  4. Add in rice and soaking water along with cumin and pepper.
  5. Bring to a boil, reduce heat, and cover.
  6. Cook at a simmer for about 20 min.
  7. Rice should be tender and water should be absorbed.
  8. When rice is done, add in minced parsley and pine nuts.
  9. Serving Ideas : Serve with baked chicken and a green salad.
