Crispy Chicken Nuggets Recipe

  1. In paper or possibly plastic bag, combine cereal, paprika, garlic pwdr, oregano and cayenne; shake to mix.
  2. Place egg white in shallow bowl; beat slightly.
  3. Dip chicken pcs in egg white.
  4. Shake dipped chicken, 3 or possibly 4 pcs at a time, in cereal mix to coat.
  5. Place half the chicken pcs in circle around edge of microwave-safe roasting rack.
  6. Cover with waxed paper.
  7. Microwave on high for 3 to 3 1/2 min till chicken is no longer pink, rotating rack once during cooking.
  8. Repeat with remaining chicken pcs.
  9. Serve with sweet and sour sauce.
  10. Makes 4 servings; about 20 nuggets.
