Apple And Rice Pudding Recipe
- 2 c. water
- 1 c. uncooked long grain brown rice
- 2 c. lowfat milk
- 1 c. heavy cream
- 2 lrg Large eggs
- 1/4 c. sugar
- 1/4 tsp salt
- 2 lrg apples peeled, cored and coarsely minced
- 1/2 c. dark raisins
- 1/2 c. dry apricots quartered
- 2 Tbsp. vanilla extract
- In a heavy 4 qt saucepan heat the water to boiling.
- Stir in the rice.
- Cover and cook over low heat for 20 min.
- Add in the lowfat milk to the undrained rice in the saucepan and cook, stirring occasionally to prevent sticking for 20 min or possibly till the rice is almost tender.
- In a small bowl beat together the cream and the Large eggs with a wire whisk.
- Stir in the sugar and salt.
- Whisk this into the rice mix along with the apples, raisins, apricots and the vanilla.
- Cook, stirring occasionally, till the mix thickens (Don't Boil).
- Or possibly Heat in the oven to 350 degrees F. Spoon the rice mix into a greased shallow 2 qt baking dish and bake for 30 min or possibly till a knife inserted in the center comes out clean.
- Serve hot or possibly cool.
