Lemon Dream Cheesecake Bars

  1. TO MAKE THE CRUST: Preheat the oven to 350^F.
  2. Lightly coat a 13"x9" baking dish with nonstick spray.
  3. In a food processor or blender, combine the cake mix, walnuts, butter, and egg white and pulse until crumbly.
  4. Press into the prepared baking dish and bake for 10 minutes, or until set.
  5. Remove from the oven and cool on a rack for 5 minutes.
  6. Do not turn off the oven.
  7. TO MAKE THE FILLING: In a large bowl, using an electric mixer set on medium-high speed, beat the cream cheese until fluffy.
  8. Gradually beat in the milk, lemon juice, egg, and lemon peel.
  9. Pour into the partially baked crust, smoothing the surface of the filling.
  10. Bake for 25 minutes, or until a wooden pick inserted in the center comes out clean.
  11. Cool completely on a rack.
  12. Cut into bars.
