Gado Gado Style Salad with Peanut Sauce

  1. Assemble the salad ingredients onto serving plate/s.
  2. For the sauce, heat the oil in a medium saucepan, and cook the onion and garlic until softened.
  3. Add the remaining ingredients and bring to the boil.
  4. Reduce heat and simmer a further 1-2 minutes.
  5. Allow to cool slightly.
  6. Drizzle the sauce over the salad and enjoy immediately.
