Gado Gado Style Salad with Peanut Sauce
- 200g green beans, trimmed, blanched
- 1 bunch broccolini, trimmed, blanched
- 1/4 green cabbage, shredded
- 2 Lebanese cucumbers, cut into ribbons with vegetable peeler
- 1 red onion, sliced into rings
- 3 tomatoes, cut into wedges Safeway 1 lb For $1.29 thru 02/09
- 100g beanshoots
- 3 eggs, hardboiled, cut into slices
- 2 teaspoons oil
- 1/2 onion, grated
- 1 clove garlic, crushed
- 3/4 cup water
- 1/2 cup KRAFT* Light Crunchy Peanut Spread
- 1/4 cup light coconut milk
- 1 tablespoon lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 teaspoons reduced salt soy sauce
- 1/2 teaspoon ground chilli
- Assemble the salad ingredients onto serving plate/s.
- For the sauce, heat the oil in a medium saucepan, and cook the onion and garlic until softened.
- Add the remaining ingredients and bring to the boil.
- Reduce heat and simmer a further 1-2 minutes.
- Allow to cool slightly.
- Drizzle the sauce over the salad and enjoy immediately.
