The Devil's Shrimp
- 1/4 cup olive oil, extra virgin
- 2 tbsp minced garlic
- 1 tbsp agave nectar
- 1 can chipotles in adobo sauce
- 1 can fire roasted tomatoes
- 1 tsp soy sauce
- 1/4 cup dry white wine
- 1 tsp ground cumin
- 2 tbsp olive oil
- 1 large chopped onion
- 2 colored bell peppers, chopped
- 1 lb mushroom, sliced
- 2 lb shrimp
- 1/2 bunch cilantro
- Liquify sauce ingredients in a blender.
- Bring the sauce to a boil in a small pot and reduce heat.
- In a large pan bring oil to medium high and add chopped onions.
- Once onions are soft, add the peppers and mushrooms.
- After the peppers are 2/3 cooked, add the sauce, shrimp and cilantro.
- Cook until the shrimp are just done.
