Pork loin with strawberry ketchup

  1. Spray a pan , I used a cast iron skillet, with nonstick spray heat very hot.
  2. Salt one side of pork.
  3. Put into hot pan, salt side down.
  4. Sear 4 minutes and turn your pork loins.
  5. Add salt to the side up.
  6. Sear 3 minutes and turn.
  7. Add a tablespoon to the top of each of the 4 loins.
  8. Add the 5th one to the pan.
  9. Let simmer 2 minutes.
  10. Remove from heat.
  11. Let rest 5 minutes.
  12. Heat a saucepan.
  13. Add strawberries and any juices.
  14. Add butter, and rice vinegar let reduce.
  15. When its turned thick add sweetener.
  16. Stirring constantly till well incorporated.
  17. Serve hope you enjoy.
