Blue Cheese Portobello Gnocchi
- 1 package (about 16 Oz. Package) Gnocchi
- 3 Tablespoons Olive Oil
- 2 cups Sliced Large Portobello Or Whole Small Crimini
- 1 whole Small Onion, Chopped Or 2 Tablespoons Dehydrated Onion
- 2 teaspoons Italian Seasoning
- 1 carton (8 Oz. Carton) Heavy Whipping Cream
- 1- 1/2 cup Shredded Parmesan
- 1 container (about 4 Oz. Container) Blue Or Gorgonzola Crumbled Cheese
- Prepare gnocchi according to package instructions.
- If youre feeling really ambitious, make homemade gnocchi!
- In a cast iron skillet (or preferred pan), heat olive oil and saute the onion and mushrooms with Italian seasoning.
- When onions are translucent, turn down the heat to medium-low.
- Add heavy cream and simmer till warmed throughout.
- Gradually stir in Parmesean and keep stirring as the sauce thickens.
- Add pepper and salt to taste (I personally like a lot of pepper in this mix).
- Pour drained gnocchi into the pan and stir to mix.
- Stir in blue cheese crumbles and mix until mostly melted.
- Serve with your favorite bread!
