Chicken Salad Delight

  1. Bring water to a boil; stir in barley, bouillon granules, and 1/4 teaspoon salt.
  2. Reduce heat.
  3. Cover; simmer 50 to 60 minutes or until tender, stirring occasionally.
  4. Drain; cool.
  5. Combine cooked barley, chicken, grapes, celery and walnuts.
  6. Combine remaining 1/4 teaspoon salt with remaining ingredients; mix well.
  7. Pour over barley mixture, tossing lightly.
  8. Cover; chill.
  9. Serve in cantaloupe halves or on lettuce leaves, if desired.
