Banana Wine Recipe
- 4 lb over-ripe bananas (peeled)
- 1/2 lb banana skins
- 1/4 lb raisins
- 1 x imp gal of water Juice of 1 lemon Juice of 1 orange
- 3 lb sugar yeast and nutrients (standard amounts)
- Put bananas and peels into a cloth bag, tie up and place in a large saucepan with the 1 gallon of water.
- Bring to a boil and gently simmer for 1/2 hour.
- Remove cloth bag and add in sugar and fruit juice.
- When cloth bag has cooled squeeze and much of the juice from the bag as possible.
- When liquid has cooled to 20-25C, pour liquid into a primary fermentor and add in the yeast and nutrients.
- Rack off sediment as per the usual schedule (1 week, 3 weeks, etc).
- After the second racking, add in the raisins (minced), and wait a few months.
- Rack off again and let age for a further few months.
