Koobideh with Veggies
- 2 tbsp butter (for frying)
- 2 clove garlic, minced
- 1 medium onion, I prefer mine cut into wedges
- 1 green bell pepper, cut into thin slices
- 2 Roma tomatoes
- 1 tsp salt
- 1 tsp ground black pepper
- 1 tbsp tumeric powder
- 1 lb ground lamb (could also do half beef, half lamb)
- 1 egg
- 1/3 cup flour
- 1 tsp salt
- 1 tsp ground black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp tumeric powder
- 1 cup lowfat, plain yogurt
- 1 salt
- 1 mint
- Mix all ingredients for the koobideh and form into six logs.
- You may need to add more or less flour to get your logs to form properly.
- Either grill or fry your koobideh until brown on the outside and the internal temperature reads 165f, turning halfway.
- In a separate pan, melt butter over medium high heat.
- Add garlic and fry until brown, few minutes.
- Add onion and pepper and fry until just barely firm.
- Add tomatoes and finish cooking through.
- Mix yogurt, salt, and mint together.
- I like mine very flavorful so I like to use a lot of both.
- Serve on side of meat.
