Chocolate Graham Drops
- 2 cups graham cracker crumbs
- 1 cup powdered sugar
- 1 tablespoon powdered sugar
- 1 cup pecan pieces
- 1 cup semi-sweet chocolate chips
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon butter, melted
- 1 tablespoon corn syrup
- 2 teaspoons vanilla extract
- In a food processor, pulse together graham cracker crumbs, 1 cup powdered sugar, pecans, chocolate chips and 2 tbsp cocoa powder until nuts and chips are finely ground.
- Add butter, corn syrup, vanilla and 1 1/2 teaspoons water.
- Pulse to blend well.
- Form into 1 inch balls.
- In a shallow bowl, blend remaining 1 tablespoon each cocoa powder and powdered sugar.
- Roll balls in cocoa sugar to coat lightly.
- Refrigerate 20 minutes, until firm.
