Lolly's Cod Fish With Fennel Butter

  1. PREHEAT the broiler.
  2. SPRINKLE the cod steaks with the salt and pepper and place them on a buttered baking sheet with a 1-inch rim.
  3. PLACE the fennel and butter in the bowl of a food processor.
  4. PROCESS with the metal blade until smooth.
  5. SPREAD the fennel butter evenly over the six steaks.
  6. POUR the wine around them.
  7. BROIL for 12 minutes.
  8. The fish should be cooked through, moist and flaky without turning it.
  9. SERVE with the pan juices.
