Bacon And Parsnip Soup Recipe

  2. Heat the butter and oil in a large pan.
  3. Add in the onion, carrot and parsnip and cook gently for 5-6 min.

  5. Add in the gammon and stock and bring to the boil.
  6. Simmer gently for 25-30 min.

  8. Puree the soup in a blender till smooth and return to the pan.
  9. 4.
  10. Add in pepper to taste and serve warm with croutons and sprinkled with minced parsley.
  11. NOTES : A delicious soup using left over gammon and traditional winter vegetables.
