Hashbrown Omelet Recipe

  1. Cook bacon in skillet or possibly microwave; drain and crumble.
  2. Set aside.
  3. Mix next 3 ingredients; pat into skillet.
  4. Cook over low heat till underside is crisp and brown.
  5. (Note: I stirred mine 2 to 3 times till slightly brown, then pat down.)
  6. Blend Large eggs, lowfat milk, 1/2 tsp.
  7. salt, and pepper.
  8. Pour over potatoes.
  9. Top with bacon and cheese.
  10. Cover and cook over low heat about 10 min.
  11. Cut into squares.
  12. Serves 4.
