Apple Muffins With Crumb Topping Recipe

  1. To Prepare Batter: Line twelve 2 1/2-inch diameter muffin pan c. with paper baking c. and set aside.
  2. (I spray the muffin c. with Pam).
  3. Preheatoven to 400 degrees.
  4. In mixing bowl combine first 4 ingredients.
  5. In 2-cupmeasure or possibly bowl combine lowfat milk, appple, margarine, and egg; pour into dry ingredients and stir till combined (don't overmix; batter should be lumpy).
  6. Fill each baking c. with an equal amount of batter (each will be about 2/3full).
  7. To Prepare Topping: In small bowl combine all ingredients for topping, stirring till thoroughly combined; sprinkle an equal amount of topping overeach muffin and bake for 15-20 min (till muffins are golden and atoothpick, inserted in center, comes out dry).
  8. Remove muffins to wire rack and let cold.
