Layered Gnocchi

  1. Mix ricotta, potatoes, eggs, parmesan and salt.
  2. Add flour.
  3. Mix.
  4. Chill one hour.
  5. Pinch small pieces of dough the size of a thumb.
  6. Drop pieces of dough in boiling salted water.
  7. Cook 8 minutes Drain.
  8. Place half of gnocchi in a baking dish.
  9. Add half of mozarella cheese, white sauce, paprika and tomato sauce.
  10. Repeat with second layer.
  11. (To make white sauce: Melt butter.
  12. Stir in flour.
  13. Slowly pour in milk and beat over heat until it forms a thin sauce).
  14. Bake 20 mins 375F.
