Easy, Simple Chipotle Chicken and Rice

  1. Drain juice from tomatoes into 2-cup measure.
  2. Add water to make 2 cups of juice/water.
  3. Set aside, along with tomatoes.
  4. Spray 10-12 inch skillet with cooking spray.
  5. Heat over HIGH heat about 1 minute.
  6. Add chicken and onions.
  7. Reduce heat to MED-HIGH and cook about 5 minutes til lightly browned, turning chicken to brown both sides and stirring onions.
  8. Add rice, juice/water mixture and tomatoes to skillet.
  9. Bring to a boil, stir, cover and reduce heat to LOW.
  10. Cook 14 minutes.
  11. Stir and serve.
