Broccolini and Sweet Potato Timbales
- 1 medium (300g) sweet potato, peeled and cut into 1 cm cubes Safeway 2 pkg For $5.00 thru 02/09
- 250g block PHILADELPHIA Cream Cheese, softened
- 1 cup (250ml) cream
- 3 eggs, lightly beaten
- grated rind and juice of 1/2 lemon Safeway 4 ct For $5.00 thru 02/09
- 1 bunch (200g) broccolini or broccoli flowerettes, chopped
- 1 tablespoon chopped fresh coriander
- salt and pepper
- 60g butter
- sweet potato chips, to garnish
- broccolini, blanched, to garnish
- Line the bases of 12 x 1/2 cup muffin pans with baking paper.
- Boil, steam or microwave sweet potato until tender.
- Combine Philly*, cream, eggs, rind, and juice in a large bowl.
- Stir in the sweet potato, broccolini, coriander, salt, and pepper.
- Spoon the mixture into the prepared pan.
- Bake at 160 degrees C for 20-25 minutes or until set.
- Gently run a knife around the outside of each timbale before removing from pan.
- Invert timbales onto serving plates, and decorate with sweet potato chips and broccolini.
- Serve immediately.
