Broccolini and Sweet Potato Timbales

  1. Line the bases of 12 x 1/2 cup muffin pans with baking paper.
  2. Boil, steam or microwave sweet potato until tender.
  3. Combine Philly*, cream, eggs, rind, and juice in a large bowl.
  4. Stir in the sweet potato, broccolini, coriander, salt, and pepper.
  5. Spoon the mixture into the prepared pan.
  6. Bake at 160 degrees C for 20-25 minutes or until set.
  7. Gently run a knife around the outside of each timbale before removing from pan.
  8. Invert timbales onto serving plates, and decorate with sweet potato chips and broccolini.
  9. Serve immediately.
