Basil and Provolone Panini
- 2 bolillo rolls, split
- 1 tablespoon olive oil
- 2 teaspoons mayonnaise
- 2 ounces provolone cheese, thinly sliced
- 14 cup thinly sliced fresh basil
- 14 cup thinly sliced red bell pepper
- Preheat panini grill to high.
- Place rolls, cut side down, on a work surface and brush crusts with oil.
- Turn rolls over and spread evenly with mayonnaise.
- On bottom halves, evenly layer provolone, basil, and red pepper.
- Cover with top halves and press gently to pack.
- Place sandwiches in grill; close the top plate and cook until golden brown, 3-4 minutes.
- Serve immediately.
