Capsicum And Corn Pancakes Recipe
- 2/3 c. flour, plain pin salt, pepper
- 2 x Large eggs
- 1 c. lowfat milk
- 1 Tbsp. vegetable oil
- 1/2 c. red capsicum
- 1/2 c. green capsicum
- 1 c. corn kernels
- 1 Tbsp. vegetable oil
- Dice capsicums.
- Heat oil in a pan, cook capsicum gently till soft.
- Set aside to cold.
- Make the batter:Sift flour and salt into bowl.
- Add in egg, lowfat milk, capsicum and corn.
- Beat well to a good batter consistency.
- Heat oil in fry pan, and fry spoonfuls of the pancake mix 1-2 min on each side or possibly till golden; drain on absorbent paper.
- Serve with grilled or possibly roast meats.
- Serves 4.
