Southwestern Corn

  1. Place the corn in a sieve and defrost under warm running water for 30 seconds.
  2. Drain and set aside.
  3. Heat the oil in a medium saucepan over medium heat.
  4. Add the red pepper and cook, stirring occasionally, for 3 to 5 minutes, until almost tender.
  5. Stir in the corn, cilantro, jalapeno pepper, salt and black pepper.
  6. Cook, stirring occasionally, for approximately 3 minutes or just until heated through.
