Jalapeno Squares

  1. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* RECIPE: JALAPENO SQUARES *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* INGREDIENTS:8 medium jalapenos, chopped.3 cups Shredded Monterey Jack Cheese and/or cheddar cheese2 med Tomatoes, peeled & sliced4 large Eggs1 1/2 cups Evaporated milk1/4 cup Flour 1 teaspoon SaltSliced avocado and sour Cream for garnish DIRECTIONS:Preheat oven to 350 degrees.
  2. Lightly butter an 11x7 glassbaking dish.
  3. Arrange the peppers on the bottom of thecasserole.
  4. Top with an even layer of the cheese and thenthe sliced tomatoes.
  5. In a large bowl, whisk the eggs untilthey are frothy.
  6. Gradually whisk in the evaporated milk,flour and salt.
  7. Carefully pour over the layers in the dish.
  8. Bake 50- 60 minutes, or until lightly browned.
  9. Serve in squares and garnish with sour cream and avocado slices.
