Iced Coffee Pops

  1. Combine brewed coffee, half and half and sugar syrup until blended.
  2. Pour into ice pop mold and cover.
  3. Freeze 2-3 hours.
  4. Gently insert ice pop sticks into pop mold, keeping as upright as possible.
  5. Freeze at least another 4 hours or overnight.
  6. To unmold, remove cover.
  7. Run outside of mold under warm water and gently pry pops from mold.
  8. Place in freezer-safe resealable plastic bag and store in freezer until serving.
  9. Quick Sugar syrup: Combine 1/2 cup sugar and 1/2 cup water in a small saucepan.
  10. Heat over medium heat just to a simmer, stiring once.
  11. Cook 2 minutes until sugar is completely dissolved.
  12. Remove from heat and cool to room temperature.
  13. Makes 2/3 cup.
