Chris Young's Tofu Dinner Salad
- 8 ounces soyboy tofu, sliced into 1/2-inch bricks (Caribbean or Tofu Lin)
- 4 -6 cups baby greens
- 1 avocado, chopped
- 14 cup cucumber, sliced
- 2 carrots, grated
- 1 tomatoes, chopped
- 1 apple, chopped (optional)
- 12 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon mustard powder
- 1 teaspoon honey
- Pan-fry the tofu in olive oil until barely brown on the edges.
- Drain on paper towel and let cool.
- Whisk together dressing ingredients in a small bowl.
- Mix all of the salad ingredients together in a large bowl and top with the dressing.
