Trio Medley Salad
- 1 cup shredded carrot
- 1 cup shredded zucchini
- 1 cup shredded jicama
- 14-12 cup raisins
- 3 tablespoons light sour cream or 3 tablespoons plain yogurt
- 2 tablespoons apple juice
- 1 tablespoon cider vinegar
- 2 teaspoons honey
- 12 teaspoon grated fresh gingerroot
- salt and pepper, to taste
- In a large bowl, combine the salad ingredients.
- Combine the dressing ingredients in a small dish and whisk to blend well.
- Pour the dressing over the salad, add salt and pepper to taste, toss and serve.
