Crab Boil in Gitchi Gitchi Ila Sauce
- 2 large yellow onions, diced
- 2 celery ribs, diced
- 10 garlic cloves, minced
- 2 cups salted butter
- 4 quarts chicken broth
- 2 12 tablespoons rosemary
- 4 teaspoons dried thyme
- 2 teaspoons ground black pepper
- 1 teaspoon fennel seed
- 2 teaspoons red pepper flakes
- 16 ounces clam juice
- 6 tablespoons tomato paste
- 2 -3 cups red rose wine
- 2 -4 lbs shrimp (add all you see fit)
- 4 -5 pieces crab legs (King or Snow or Dungeness, add all you see fit)
- 3 -4 lbs smoked sausage (add all you see fit)
- 6 red potatoes (add all you see fit)
- 6 pieces corn on the cob, halves (add all you see fit)
- 4 tablespoons red hot sauce
- 2 lbs French bread
- Fry onion, celery, garlic in butter until fragrant and soft in large gumbo pot.
- Take all the spices (rosemary, thyme, pepper, fennel seed, red pepper flakes) and crush them in a bullet or wt a pestle mortar.
- Pour in broth, and mix in the crushed spices, clam juice & tomato paste (I use knorr chicken bouillon powder mixed in water boiled for my broth, no salt needed if used).
- Place cover on pot and bring to a boil, reduce heat to low and simmer 1 hour, stirring occasionally.
- Stir wine into the broth and continue to simmer and occasionally stir for 1 hours.
- After 1 hour, add all of the seafood, sausage, potatoes & corn, let simmer for 1 hour.
- C'est si bon!
- Serve with the French Bread (sometimes I brown the bread with a little olive oil).
