Salmon, w/Tomato, Spinach & Mushrooms

  1. Place salmon fillet, skin side down, in 8x8-inch baking dish sprayed with no stick cooking spray.
  2. Chop fresh spinach leaves and tomatoes.
  3. Mix remaining ingredients until well blended; spoon over salmon.
  4. Bake at 375° F for 20 to 25 minutes or until salmon flakes easily when tested with fork.
  5. Boil pasta according to package directions; drain in colander.
  6. Put olive oil and garlic in pot.
  7. Add pasta back in, stir and serve.
  8. Enjoy 2 NEWTONS Fruit Chewy Cookies for dessert.
