Chicken Casserole with Potato Dumplings

  1. Cook chicken in broth: Bring broth to a boil, dump chicken, Turn off heat.
  2. Let stand 1 hour, covered.
  3. Let cool.
  4. Remove skin and bones and shred chicken.
  5. Make sauce.
  6. Cook onions in oil, stir in garlic, cook 1 minute.
  7. Add bell pepper, cook until wilted.
  8. Add chopped tomatoes and season.
  9. Simmer 10 minutes.
  10. Add chicken and 1/4 cup broth to sauce.
  11. Cook 10 minutes.
  12. Set aside.
  13. Place dumplings in a baking dish all around close to the sides.
  14. Place chicken, olives and sauce in the center.
  15. Sprinkle parmesan on all.
  16. Bake in 350F (180C).
  17. for 30 minutes.
