Chicken Carrot and Cucumber Salad
- 2 cups chicken breasts chopped cooked
- 1 1/4 cups cucumbers chopped seeded
- 1/22 cup carrots matchstick-cut
- 1/2 cup radishes sliced
- 13 cup scallions, spring or green onions chopped
- 1/4 cup mayonnaise, light
- 2 tablespoons cilantro chopped fresh
- 1 teaspoon garlic bottled minced
- 1/4 teaspoon salt
- 1/4 teaspoon cumin ground
- 18 teaspoon black pepper
- 4 each red lettuce leaves, green
- 4 each pita bread, whole wheat each cut into 8 wedges, 6-inch
- Combine first 5 ingredients in a large bowl.
- Combine mayonnaise and next 5 ingredients (through pepper) in a small bowl, stirring with a whisk.
- Add mayonnaise mixture to chicken mixture; stir until combined.
- Place 1 lettuce leaf on each of 4 plates; top each leaf with about 1 cup chicken mixture.
- Place 8 pita wedges on each serving.
