Fresh Pineapple and Pepper Salsa
- 1 can (8 Oz. Size) Crushed Pineapple In Juice
- 1/2 Large Red Onion, Diced
- 1 Yellow Bell Pepper, Diced
- 1 Thai Chili Pepper, Chopped Fine (for Heat; Optional)
- 2 Tablespoons Chopped Cilantro (or More If You Prefer)
- 1/2 teaspoons Black Pepper
- Combine the ingredients in a medium-sized bowl and mix well.
- You can drain the pineapple and reserve the juice and then add back as much as you like, or all of it if you prefer.
- Cover and refrigerate for at least 30 minutes for the flavors to meld.
- Serve as a topping for fish or even pulled pork tacos!
