Tabouli
- 1 cup Bulgar wheat, dry
- 2 cups boiling water
- 1 12 teaspoons salt
- 14 cup lemon juice
- 1 teaspoon garlic
- 12 teaspoon mint, fresh
- 14 cup olive oil
- salt and pepper, to taste
- 14 cup scallion, chopped (including greens)
- 2 tomatoes, diced
- 1 cup parsley, chopped
- 12 cup chickpeas, canned
- 1 cucumber, chopped
- Cook bulgur wheat.
- When it is done, add lemon juice, garlic, oil, mint, salt and pepper, and mix thoroughly.
- Refrigerate 2-3 hours.
- Just before serving, add the vegetables and mix.
