Zucchini Marmalade

  1. Put zucchini through food grinder into bowl.
  2. Pour sugar over top.
  3. Cover and let stand on counter overnight.
  4. In morning, transfer to large pot.
  5. Cut oranges and lemons onto wedges, remove seeds.
  6. Put through food grinder with ginger.
  7. Add ground ingredients to zucchini and stir over medium heat until sugar dissolves.
  8. Bring to boil, stirring occasionally.
  9. Boil until thickened,stirring occasionally--this will take about 1 hour, 15 minutes.
  10. Cool a small spoonful on chilled saucer to see if it jells.
  11. Fill hot sterilized jars to within 1/4 inch of top.
  12. Seal.
