Lively Lentils

  1. Bring lentils to a boil in the water and simmer 25 minutes.
  2. In a skillet, saute onion and green pepper in oil until soft.
  3. Add to lentils, along with all other ingredients.
  4. Simmer an additional 20 minutes until lentils are cooked, but not mushy.
