Chocolate Mousse With Equal Recipe
- 1 env. unflavored gelatin
- 2 c. skim lowfat milk
- 6 tbsp. semi-sweet chocolate chips
- 1 tbsp. cornstarch
- 1 egg, separated
- 3 packets Equal
- 1 teaspoon vanilla
- Dash salt
- In medium saucepan, combine gelatin and lowfat milk.
- Let stand 1 minute, then add in chocolate chips, cornstarch and egg yolk.
- Cook over medium heat, stirring constantly, till mix comes to a full boil.
- Reduce heat and cook 1 minute longer.
- Refrigeratetill slightly thickened, stirring occasionally.
- Set saucepan in a larger bowl of ice cubes.
- Add in Equal and vanilla.
- Beat with mixer at high speed 5 to 6 min.
- In another bowl with clean beaters, beat egg whites with salt till stiff peaks form.
- Fold into chocolate mix.
- Spoon into 6 serving glasses.
- Refrigerate2 hrs, then serve.
