Coriander Pesto
- 1 bunch coriander
- 2 cloves garlic
- 2 tbsp. pumpkin leaves
- 2 tbsp. fresh lime juice
- 2 tsp. salt
- 1 tsp. freshly ground pepper
- 5 tbsp. olive oil
- In a food processor, combine the corriander, garlic, pumpkin seeds, lime juice, salt and pepper.
- With the motor running slowly add the olive oil until the sauce is emulsified.
- May be prepared two days ahead.
- Bring to room temperature 1 hour before serving.
