Quinoa with Feta & Vegetables
- 2 cups 25%-less-sodium chicken broth
- 1 cup quinoa, uncooked
- 2 carrots, coarsely shredded Target 2 lb For $3.00 thru 02/06
- 1 small zucchini, coarsely shredded
- 1 clove garlic, minced
- 2 cups fresh spinach, chopped
- 1/4 cup Kraft Calorie-Wise Greek with Feta & Oregano Dressing & Marinade
- 1/4 cup Cracker Barrel Crumbled Feta Cheese with Oregano, Sun Dried Tomatoes and Black Pepper
- Bring broth and quinoa to boil in large saucepan on high heat; simmer on medium-low heat 15 min.
- or until liquid is absorbed.
- Stir in carrots, zucchini, spinach and garlic.
- Spoon into large bowl; cool completely.
- Stir in dressing; top with cheese.
