Garden Sausage Quiche Recipe texana
- 2 C finely chopped pecans
- 2T olive oil
- 1/2 C shredded soy based cheese substitute (swiss or sharp cheddar flavor)
- 2 T olive oil
- 1/2 C chopped shallot
- 10 oz mushrooms (your favorite), thin sliced
- 4 green onions, sliced thin
- 1/2-1 jalapeno, seeded and minced fine (optional)
- 1 pound soy sausage, breakfast style
- 1 1/2 C soy milk
- 8 large eggs, lightly beaten
- 1/2 t salt
- 1 t fresh ground peppercorns (mixed is best)
- 2 T olive oil
- 2 T finely chopped fresh thyme
- Mix first three ingredients and press on bottom and partly up sides of 2, 9" or 10" deep dish pie plates
- Bake at 350 for 10 minutes.
- In large skillet over medium heat, sautee mushrooms, shallots and green onions for a few minutes until just soft.
- Crumble sausage into skillet and heat through.
- Remove from heat and pour into mixing bowl
- Add remaining ingredients, in the order given, and stir to combine.
- Very gently (to not disturb the nut crust) the egg mixture into the crusts.
- Bake at 350 until set, 25-30 minutes.
