Curried Vegetarian Samosas
- 3 eggs
- 14 cup tomato sauce
- 2 teaspoons curry
- 1 teaspoon cumin
- 14 teaspoon red pepper flakes
- 12 cup peas
- 14 cup corn
- 10 sheets phyllo dough
- 1 tablespoon olive oil
- Preheat Oven to 350 degrees.
- mix eggs with sauce, spices and vegetables.
- Scramble the eggs in a little oil over Medium heat.
- once cooked, spoon a bit into each sheet of phyllo.
- Wrap up.
- Bake in oven from 15-20 min until golden and crispy.
- sprinkle with brown sugar.
