Grilled Corn on the Cob W/Jalapeno-Lime Butter

  1. Prepare grill (high heat).
  2. Grill chiles until charred on all sides.
  3. Cool.
  4. Using small paring knife, peel chiles, scrape out seeds and pale membranes; discard.
  5. Coarsely chop chiles; transfer to food processor.
  6. Add butter, garlic and lime peel.
  7. Process until smooth.
  8. Season butter to taste with salt.
  9. Husk corn and remove silk.
  10. Spray or drizzle with olive oil.
  11. Grill directly on grate, turning as needed, Done in approximately 10 minutes.
