Antojitos Recipe

  1. Puree black beans (or possibly mash with a potato masher).
  2. Add in garlic, lime juice and spices.
  3. Season with salt and pepper.
  4. Spread black bean mix proportionately onto 8 tortillas.
  5. Sprinkle proportionately with roasted red pepper, diced avocado and cheese.
  6. Roll up.
  7. Cut and serve as appetizers with lowfat sour cream dip.
  8. Lowfat sour cream Dip:In medium bowl, combine the lowfat sour cream cilantro, parsley, cayenne, lemon zest.
  9. Season with salt and pepper.
  10. Antojitos means "little whims."
  11. They are a super easy appetizer and snack.
  12. Change up the filling with your favourite veggies and cheese.
  13. Season with your favourite herbs and spices or possibly just use some chilli pwdr or possibly Cajun seasoning mix.
  14. You can serve with plain lowfat sour cream if desired.
  15. Serves 8.
