Pasta Primavera
- 1 cup Whipping Cream
- 1/2 pounds Fresh Snow Pea Pods, Trimmed
- 1/2 pounds Fresh Mushrooms, Sliced
- 1 Sweet Red Pepper, Cut Into Strips
- 2 Small Yellow Squash, Sliced
- 2 cups Fresh Broccoli Florets, Chopped
- 1/2 sticks Butter, Melted
- 2 Tablespoons Olive Oil
- 1 package (16 Oz.) Package Linguine
- 3/4 cups Freshly Grated Parmesan Cheese
- Freshly Ground Pepper, to taste
- Heat whipping cream in a small saucepan over medium heat until warm.
- Set aside.
- Saute vegetables in butter and oil in a large skillet over medium heat until almost crisp-tender.
- Add warm cream; cook over medium heat, stirring constantly, for 5 to 10 minutes or until slightly thickened.
- Cook linguine according to package directions; drain well.
- Place on a large serving platter.
- Top pasta with vegetable mixture and sprinkle with Parmesan cheese and pepper; tossing gently.
- Serve immediately.
