Pineapple Pork

  1. Drain pineapple; save juice.
  2. Cook pork in hot oil in a large skillet until browned; drain.
  3. Add onion and cook until tender. Combine sugar, cornstarch and salt in a small bowl.
  4. Gradually add water, stirring until smooth.
  5. Stir in pineapple juice, vinegar, catsup and soy sauce.
  6. Add to pork, stirring constantly; cook over medium heat until sauce thickens.
  7. Cover; reduce heat and simmer 45 minutes or until meat is tender.
  8. Stir in the pineapple and green pepper; cover and cook 3 minutes.
  9. Serve with rice.
  10. Yields 4 to 6 servings.
