Pineapple Bulgar Wheat Salad
- 13 medium avocado
- 13 cup fresh pineapple chunk
- 34 cup Bulgar wheat, cooked and (chilled)
- 14 cup red bell pepper, chopped
- 2 tablespoons celery, chopped
- 1 scallion, thinly sliced
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- Peel and cube avocado and stir in pineapple.
- Pineapple will prevent avocado discoloring.
- Combine ingredients and toss.
