Avgolemono (Greek Lemon Soup) Recipe

  1. Heat broth and water in medium saucepan over med high heat.
  2. Gradually add in warm broth broth mix and lemon juice to Large eggs, stirring constantly with a whisk.
  3. Return mix to pan.
  4. Cook over medium heat till slightly thick
  5. (about 15 min), stirring constantly.
  6. Remove from heat; stir in rice, salt and pepper.
  7. Serve with a lemon slice.
  8. Yield 6 serving, 2/3 c.
