Kickin Habanero Cheese Crackers

  1. Preheat oven to 350 degrees F. Line 2 large metal cookie sheets with parchment paper, or use 3 ungreased pizza stones.
  2. In a large bowl, add cheeses and butter; beat with an electric mixer until the cheese and butter are well blended.
  3. Stir in salt, onion powder, habanero flakes, nutmeg, cornmeal and flour; mix thoroughly by hand.
  4. On a lightly floured cutting board, divide the dough in half.
  5. Roll each dough into equal rectangular shapes.
  6. Using a crinkle cutter or sharp knife, slice dough into cracker shapes and place on cookie sheets or pizza stones.
  7. Bake for approximately 10 minutes on metal cookie sheets, or 15 minutes on pizza stones.
  8. Keep close watch, the bottoms of the crackers should be light brown.
  9. Transfer to a cooling rack.
  10. Once cool, store in an airtight container at room temperature.
  11. Makes about 48 crackers.
