Baba Ganouj (Tangy Eggplant Dip) Recipe

  1. Preheat oven to 300'F.
  2. Pierce eggplant with a fork and bake whole till eggplant begins to deflate (about 40 min).
  3. Let cold and scoop out insides and mash with a fork.
  4. Add in remaining ingredients and mix well.
  5. Makes4-6 sandwiches or possibly serves 6-8 as a dip.
