Baba Ganouj (Tangy Eggplant Dip) Recipe
- 2 med Eggplants
- 2 Tbsp. Tahini
- 2 x Garlic cloves, pressed Juice of 1 lemon
- 2 Tbsp. Minced fresh parsley (opt)
- 1/2 tsp Salt Black pepper to taste
- Preheat oven to 300'F.
- Pierce eggplant with a fork and bake whole till eggplant begins to deflate (about 40 min).
- Let cold and scoop out insides and mash with a fork.
- Add in remaining ingredients and mix well.
- Makes4-6 sandwiches or possibly serves 6-8 as a dip.
